This Chickpea Veggie Loaf is quick and easy to make. Prepare, toss in the oven and serve it up with some baked Ripe Plantins and a Salad, or have it with your favorite side dish, it even makes a great sandwich. Either way you’re sure to enjoy this flavorful dish.

Chickpea Veggie Loaf
1 cup of cooked chickpeas or 1 can (15 oz) chickpeas, rinsed and drained, and pulse finely in food processor
1 large sweet potatoes, baked, peeled and cubed
1/2 cup quaker oats (pulse oats in processor until finely ground)
1 tablespoon ground flax seed
1 cup of mixed vegetables
Salt and pepper to taste
1/2 small yellow pepper
1 teaspoon salt free seasoning
1 teaspoon Memphis style seasoning
1 teaspoon Italian seasoning
2 cloves garlic (minced)
1/2 small vidali onion (chopped)
1/4 scotch bonnet pepper (chopped) this is very hot so use gloves if necessary. This ingredient is optional
Preheat oven to 375°F. Mix in a small bowl, grounds quaker oats and ground flax seed, add cooked diced sweet potatoes use a pototoe masher to mash and blend, add minced and chopped garlic and onions, all seasoning and mix well (let sit for 15 minutes) then add mixed vegetables and let sit for 10 minutes.
Preheat the oven at 375 degree. Oil baking pan and spread the batter into the pan, bake for approximately 35 minutes.
Serve with baked Ripe Plantins and a Salad, or have it with your favorite side dish, it even makes a great sandwich. Enjoy!
