Mango Kuchela
Kuchela is a specific kind of mango chutney eaten in Trinidad, a country where over half of the population has roots in India. It's made of grated green mangoes, and seasoned with a blend of spices, garlic, and pepper. This treat can be used to enhance the flavor in curries, nan, roti and any other dish or even just as a snack.
Ingredients
- 2 green Mangoes
- 1/2 teaspoon Cumin
- 3 pieces Garlic (minced)
- 3 pieces Chilies or 1 small scotch bonnet pepper (minced)
- 1/4 teaspoon Tumeric
- 1 teaspoon Masala
- 1 teaspoon Sea Salt to taste
- 3 tablespoon Mustard Oil

Instructions:
Peel mangoes, and the seeds.
mince or grate
Tie minced mangoes in cloth and squeeze until no more juice.
Spread out in the sun for 3 to 4 hours or put in a heated oven on low heat to further dry out for 15 minutes.
Heat oil in a saucepan and all all ingredients, stir on low heat for approx three minutes, Add the grated mango to the saucepan. Mix well, taste and adjust seasoning as needed.
Additional items needed are cloth for straining and clean jar for storing.
Let cool, place in a clean jar and store in fridge.
