Pumpkin and Salt Fish


1/4 of a small Pumpkin (remove skin)
1/4 Onion
4 Cloves of Garlic
1 Thyme leaf
2 small pieces of Salt Fish
Pinch of Sea Salt
Pinch of Black Pepper
1 tablespoon of Oil
Habanero Pepper (optional)

Boil the Salt Fish for 20 minutes to remove excess salt, drain, rinse off and set aside. Remove skin of the Pumpkin, and cut up in small pieces. Add chopped Garlic into hot Oil stirring until golden brown then add Onions and Habanero Pepper cook for two minutes. Add Pumpkin, cover and cook for approx. 15 – 20 minutes until soft (cooked) then add Black Pepper, Thyme, Salt Fish and stir, and cook for two more minutes. Only add Salt if needed. Enjoy~

*Note: If adding the Habanero Pepper leave the pepper whole it’s for flavoring only. If you enjoy spicy foods as I do you can cut it up, and enjoy the flavor.
