Rosemary Turmeric Sweet Potatoes (Vegan)

Ingredients
- 1 teaspoon Coconut oil
- 2 teaspoon Turmeric
- 2 teaspoon Rosemary leaves
- 1 teaspoon Italian seasoning
- 1 teaspoon Old Bay seasoning
- 3 cloves Garlic
- 2 medium to large Sweet potatoes (organic)
- 1 dash Black pepper
- 1 dash Pink Himalayan salt
Instructions

Prepare the sweet potatoes by peeling them, then cutting into chunks, rinse off and pat dry with paper towels.

In a bowl, add the Italian seasoning, paprika, old bay seasoning, turmeric, black pepper, and mix together.

Add the potato chunks and stir together making sure each piece of potato is seasoned with the mix.

Heat 1 tbsp of coconut oil in saucepan with the minced garlic, stir for a few seconds until golden brown (do not burn) if the garlic burns you'll need to start over with a clean pot and fresh oil.

When garlic becomes golden brown add the seasoned sweet potatoes and let cook for approx 15 minutes (uncovered) stirring occasionally.

After 15 minutes add rosemary and cook for another 5 minutes on low heat. Add pink Himalayan salt to taste!

Served with steamed or sauteed vegetables. Serves 2 - 4 as a side dish!
