Saltfish Buljol (Caribbean Style)

½ pack of salt fish
4 cloves garlic
½ white onion
1 scallion/green onion
1 whole tomatoe
½ green pepper (optional)
¼ habenero pepper (optional)
piece of cabbage (optional)
2 teaspoon canola oil
Black pepper
Shadow benny (optional) if you can’t find it.

Boil salt fish to get most of the salt out (approx. 15 mins), rinse with cold water, chop to medium size and set aside. Heat oil in pot and add minced garlic, when garlic is golden brown add onions & pepper(s), cook for approx. 5 minutes and then add saltfish. After five minutes add chopped cabbage and tomatoes, scallion and shadow benny, cook for 3 minutes. Add a dash of black pepper. Serve hot with roti/tortilla, rice or as side dish. Enjoy~
