Skinny Sweet Potato Pancakes

These Skinny Sweet Potato Pancakes are a change up from regular pancakes, they are very delicious and filling.

Here’s the recipe:



  1. Wash sweet potatoe,  place in a covered dish and bake for approximately 45 minutes or until cooked.  Remove the potato skin and mashed the potatoes together with 1 teaspoon of dairy free butter. 
  2. In a medium bowl, sift together flour, baking powder, and nutmeg.    Blend sweet potato mixture and raisins into the flour mixture to form a batter.
  3. Preheat a lightly greased griddle over medium-high heat with coconut oil. Drop batter mixture onto the prepared griddle by heaping tablespoonfuls, and cook until golden brown, turning once with a spatula when the surface begins to bubble.  Served with Raw Honey.  Enjoy!
